Kendall is too Toddlers and Tiaras for OP.

I think All My Children (Kendall was the daughter of the famous Susan Lucci character, Erika Kane.) These are all very daytime soap opera names.

I just had a relative name their baby Briar....is there some TV show popular with millennials that has this as a name?

It is a name. It means "a thorny patch", and was the original name of Sleeping Beauty - Briar Rose.

With this reasoning, I assume that Cinderella and Rapunzel are also on the table?

Well according to SSA "Princess" was the 744th most popular name in 2018. If given the choice Id pick Cinderella or Rapunzel over "Princess" (which sounds like a dog or cat name to me).

They secretly loved Blair from Gossip Girl, but didn’t want it to be obvious, hence Briar.
