Artichokes always make me think of the Little Rascals. I do enjoy pickled artichokes as well as a good artichoke dip, but have to admit I’ve never prepared one myself. Might be time to try - I searched for the episode in question, and found a recipe I might be brave enough to try one of these days.

Ok, people. This thread is missing the OG offensive vegetable: pumpkin. If it’s so bad that nobody can tolerate it unless it’s soaked it sugar and spices, then maybe we just should not eat it.

We aren’t starving. We don’t have to eat pumpkin.

Thai pumpkin in red curry paste, coconut milk, cashew, peppers and tons of Thai basil.

Y'all eat terribly cooked vegetables and so you don't like vegetables. They are delicacies with the right Asian recipes..

I mix mustard greens, kale and cauliflower in my Indian Spinach Cheese (Palak Paneer) recipe. It is finger licking good.

You are new to the thread so I will educate you. Yes, anything tastes good with the right stuff added to it. That's the point. Stop insulting us or we'll swing it right back to you and wonder why you had to develop these intricate recipes with horrible base vegetables.

Correct. I went on a pumpkin tour and 99% of the pumpkins are grown to put on your front porch and are not for human consumption. After they rot I chuck them in the backyard and even the squirrels won't touch em.

Leeks are so sandy and stringy.
I made a potato leek soup (the recipe is actually potato ONION leek) and just omitted the leek and let the onion carry the way and it was much better. Sorry leeks.

The sand can be a b* to clean, but I love the flavour. Roasted leeks with butter mmmmm

But pumpkin tastes good on its own roasted. You don't need to add all the stuff PP adds. Red curry paste, etc., just covers the taste of pumpkin up.

+1. The pumpkins to cook are the small sugar pumpkins. The giant ones are just grown to be Halloween decorations.

I’ve done this both ways - either Joy of Cooking or Julia Child I forget which. The version with leeks is better to me, but you really have to soak them to get them clean.


Thank you for the evidence-based scientific addition to this thread. I love a good A/B test. Can you address the stringy part of the leek even post vitamix? Am I using the wrong parts?
