I need inspiration. I don’t even think I have ten but these are my go to meals. They generally all include a different mix of roasted vegetables depending on my mood from roasted bell peppers, asparagus, mushrooms, cauliflower, broccolini, sautéed cabbage, onions, sometimes sweet potatoes
Mains -roasted salmon -lemon thyme chicken (NYT recipe) -chicken shawarma (yes NYT recipe but I use breasts not thighs) -shakshuka -veggie omelette scramble -chickpeas + avocado -grilled scallops -occasionally penne with vodka sauce or penne with pesto I think that about sums it up. I generally like healthy fairly low effort high reward meals. |

-Lemongrass pork meatballs with rice noodles and salad (original recipe is for letuce wraps but I just make it as a salad. I often don't make the noodles with it.
-Milk Street's Chickpea/Cilantro Soup with paprika croutons -Tacos made with chicken thighs -Spaghetti with garlic, olive oil and peas -Roasted, stewed eggplant (husband makes this) -Chicken and Broccoli stir fry with rice -Quiche, usually Garlic Broccoli -Brazilian coconut shrimp stew -Salmon, usually in cake form because my kids like it that way -Black Bean Burgers (Sally's Baking Addiction recipe) |
