I’m having my mentee and her husband over for dinner. They dropped that they are vegan and gluten free. FFS. One or the other I’m totally prepared for but both?
Any ideas? I was thinking of a tofu veggie pan roast with rice, hummus, etc, sort of middle eastern vibes but w tofu. Anything else you make you like? |

Vegan and GF is fairly easy if you pick the right dishes. If they are celiac, I would order from outside.
Mexican - do corn tortillas, leave out cheese. Italian - stay away, no good way to do it. Middle-eastern - endless possibilities Asian - use GF condiments |
Also, think bowls. That way they can pick and choose and you can have your meat, cheese and wheat. |

I don't particularly care for the tofu - middle eastern combo.
If you want great vegan Asian recipes, check out Woon Heng and the Korean Vegan. Not all are gluten free, but there are plenty of recipes that fit the bill. I am Indian and would make Indian food. A lot of the vegetarian dishes are vegan as well if you omit the ghee/ cream/ butter. Rice instead of naan. You can even make a very tasty saag "paneer" with tofu. If you are cooking Asian food please check that the soy sauce you use is gluten free - a lot of it isn't. And if serving wine, make sure it is labeled vegan as a lot of wine is clarified with egg albumin. As others have pointed out, ordering takeout can save you the hassle of checking all ingredients, etc. If you're in DC, Thip Khao has great vegan options! |

Same input. Don’t order Asian, but if you decide to make it, it’s easy to sub out soy for tamari.
