How else to eat eggs in a healthy way?

I like eating eggs in the morning, but I'm looking for other ways to eat them that are healthy. What vegetables do you like to eat with eggs in the AM? So far I've done:

1/2 tortilla with eggs scrambled with onion, peppers, ham

eggs scrambled with broccoli and cheese

cabbage sautéed and put in an egg sandwich

Quiche / egg cup recipes are too involved for me (I hate washing out muffin tins... Dislike using the oven...), but any other quick stove top ideas that I'm missing?

Use disposable muffin liners. Don't forget mushrooms.

I feel like people have all sorts of different definitions of healthy. So, these might not meet yours, but it seems like you're looking to add healthy plant foods and aren't afraid of a little fat?

poached egg on avocado toast

poached or sunny side up egg on a hash made of brussel sprouts, or sweet potatoes

eggs tempered and added to oatmeal with fruit

cauliflower "fried rice" with scrambled egg

My daughter for some reason calls this egg salad but it's just a scramble - eggs with spinach, tomatoes and parmesan.

I sauté spinach in olive oil and garlic and put a fried egg with runny yolk over top, and some grated parmegiana.
Or put it in a tortilla with guac.
Arugula is good on an egg sandwich but I’d like cheese on that also.

I love a simple soft boiled egg with toast. I dip toast fingers into the yolk. Not used to eating veggies at breakfast. Now I’m pregnant it’s a hard boiled egg sliced on toast.

These sound great. Curious about the tempered egg in oatmeal. Does it just add protein and richness? When do you add the egg?

The Jennifer Aniston truck! Egg whites in oatmeal. Great way to add protein without changing the flavor.

I was going to say to remove the yolk (or at least the majority of it) to make your eggs more healthy per your post title, but you're looking for recipe ideas.
Try breakfast burritos/tacos. We jazz it up with gyros + feta + egg. So good.

It depends how you're making the oatmeal -- crockpot, baked, overnight (not sure you can do eggs there), instant, stove top.

I don't do it often, becuae my kids like eggs as a side to their oatmeal, unless I'm baking the oatmeal. I always put eggs and a lot of fruit in my baked oatmeal.

Scrambled with goat cheese and chives

Make a frittata with leftover fajita seasoned peppers and onions ( make double the onions and peppers that you’d use for fajitas the night before and save half for breakfast), fill a small frying pan with the peppers and onion on high heat, add in eggs, place in oven until set

Artichoke, paprika and Parmesan frittata

Poached eggs, place in an avocado when done, diced roasted potatoes or toast

Deviled eggs

I like a slice of whole grain toast topped with slices of avocado, tomato (if in season, if not sliced radish), and sliced hard boiled egg with some EBTB seasoning.

It’s funny you suggest that because I think removing the yolk from an egg makes it less healthy. That’s where most of the nutrients are. Why would you remove it?
