Soup dumplings

Xiao Long Bao

Had them at a restaurant in Alexandria and have thought about them every 20 minutes since.
I need to make them, anyone pull it off and have a recipe you want to share?

OP- kung fu kitchen in Alexandria; my visit was totally random, I was hungry and buying something in the same shopping center. I’m pretty decent at making pasta so maybe some of my skills will translate but there looks like there’s going to be a really steep learning curve.
Either way, these f-ers are my every other thought.

I think I saw these dumplings at Trader Joe's... so you don't have to shlep to Alexandria while you are learning to make them .

Yes, trader joe’s carry them and they scratch the soup dumpling itch. As far as making them, I wanted to try but it ended up being a lot more work than I wanted to put in. You have to gelatinized the broth, cut it up into cubes but then also make the pork, and the dumpling dough and put it all together. Instead I just took a trip to Trader Joe’s and bought several boxes and keep them in my freezer.

Absolutely not worth the effort to make them. Just buy. It takes tons of practice and a lot of labor. Then steaming them right isn't the easiest either. Not worth it at all.

Had them for the first time a few years ago in NYC and they were just amazing.
I was so excited when I found the TJ ones - just wish the boxes were bigger!

Good luck! Dumplings and Beyond in Glover Park has serviceable ones if you need something in DC
