I generally eat a lot of roasted vegetables—the regulars are: asparagus, peppers, squash + zucchini, brussels sprouts, cauliflower, broccoli, and then sautéed cabbage. Any suggestions? I tend to like more flavorful/sweeter methods of preparation (I don’t really like raw veg in salad etc) |

| I marinated two eggplants cut in large cubes with 2 tablespoons of olive oil, some balsamic vinegar, cumin, paprika, Chile flakes, oregano, salt and a sprinkle of brown sugar, baked at 400F for 25 minutes, tossed them half way, they were delicious, enjoyed them in my salad and added the leftovers to the spaghetti sauce. |
| Carrots are so good roasted! I roast them with Moroccan spices. |
