I would like to make this Corn and Poblano Lasagna for friends but am struggling to come up with a complimentary vegetarian side dish to go with it? Also, what would be a good vegetarian starter? I’m thinking a nice soup but again struggling to find one that would go well with the meal. We are vegetarian so please suggest vegetarian recipes. Thank You for any suggestions!

I think a light fresh salad is always nice with any lasagna-type dish. You could include avocado, tomato, lime as a fresh counterpoint to the heavy pasta dish. |
Agree with this salad idea. Especially if it’s dressed with a cumin/chili/honey/lime dressing. |
| This seems weird with lasagna noodles. I would use corn tortillas. Make it more like an enchilada casserole. Calling this a lasagna is just wrong. |
