No one answered OP’s questions. Here’s a recent day for me.

Breakfast- 100 calorie “lite” English muffin, half a banana, 1tbsp peanut butter, 1/2c blueberries

Lunch - turkey lunch meat, 1oz pretzels, 2tbsp hummus, carrot sticks, strawberries

Snack - 1oz mixed nuts. You need to weigh them. An Oz of nuts is basically a shot glass.

Dinner - 5oz chicken tenderloins, 1/2c brown rice, 1/2c diced roasted sweet potato, 1/2c black beans, salsa, 2tbsp guacamole
Dinner -

My day, about 1600 calories:
Scrambled eggs and zucchini for breakfast
Lean Chopt salad for lunch (kebab Cobb, etc), light on the dressing
Chicken breast, all the veggies or salad I want (no potatoes or starchy veg).

Portion size can be pretty big if glycemic index is low. I miss got have a snack like almonds or low fat cheese stick.

I usually eat 1400 to 1600 calories per day. Smoothie for breakfast, taco for lunch, and dinner with meat and a veggie. Maybe a piece of fruit or cheese for a snack.

Does the Fitbit number included the calories burned by just being alive (your BMR) or is it on top of this? I find it hard to believe anyone burns 1600 additional calories by just walking around the office but that level of walking plus a persons BMR is easy to believe equals 1600.

Toasted light English muffin (100 calories), two sprays of I Can't Believe It's Not Butter (20 calories), topped with a scrambled or poached egg (75) and thin sliced Swiss cheese (40) = 235 calories

Garden Salad (just veggies) with light dressing (100 calories) + bowl of homemade turkey chili (400 calories) = 500 calories

Chicken/veggie/quinoa stir fry = 600 calories

(1600-1335 = 265 calories leftover for snacks/dessert/wine)

Or you could have a medium thin crust pepperoni cheese pizza and a couple of light beers or vodka sodas.

You need to start tracking. It is life-changing. The tracker helps keep me accountable, and stops me from grazing. I used to eat a bunch of 100-140 calorie snacks a day, thinking 'no big deal' each time. Turns out it was a big deal.

PP here. I definitely do that. I exercise a lot so I can get away with it. I have a history of disordered eating so I’d rather not track what I eat—it can get out of control.
