It’s a terrible clash of personalities but I see “faults” on both sides here.
OP, consider that in any profession, employers want to see a new employee has mastered basics before trusting them with more autonomy and responsibility. Sounds like you started trying to change the routine before MB was confident you were able to follow it well, so the more you struggled against it, the more concerned she got that you were unable to handle the basic routine.
Also, maybe the toddler to kindergarten age range might be a better fit, as long as you’re good with discipline and managing behavior. At that age, most parents want the kids to have a lot of socialization, outings and activities, and nannies tend to have a lot more free rein over schedule.

Sounds about right to me, especially with an infant, not a toddler or preschooler.

I mean... you're both not coming off so well. She sounds controlling. And you're a crappy nanny. You wouldn't stick to her schedule, you baked cookies in her house and didn't clean up after yourself, you didn't want to do baby related chores like the baby's laundry... I would have let you go as well.

Yes! It sounds like she baked - wonderful! - but didn't clean up after herself! There's no way I would want to come home after a long day of working and have to clean up because my nanny was bored and decided to bake. Like, I would be LIVID.
