I have never been paid with less than a 1 week lag.

I would not have that. If anyone is to earn interest on my money, it'll be me. Thank you.

Why do they need a week to "process" anything? Are they under-staffed? I doubt it. Sounds fishy to me.

There's no interest drawn by the payroll firm. The money doesn't leave your account until it's transferred to your nanny!

So GTM needs a week to do exactly what?

It's not a week. Work week ends on a Friday. The following Monday you submit hours and anything special about pay for that week (like PTO, OT or whatever) to GTM. GTM starts the payroll process and the bank makes transfer from your account to nanny's account on Friday. It's a 3-day process. The money is in your bank account the whole time until it's transferred to your nanny's account.

We "certify" the hours on Breedlove by noon on Tuesday for that week and the prior week and she gets the direct deposit on Thursday. So, yes, we pay her prospectively, but that's never been a problem. If we were wrong about the hours for some reason (she leaves early or stays late on Friday, for example), we just fix it with the next paycheck.
