Ours died unexpectedly and the new one won’t be here until NEXT Saturday!
We DO have a grill and a crockpot, thankfully. The grill does have one burner, so I can still utilize one pot. I’m mainly concerned about sides! It’s going to be hard without an oven and stovetop. Who would like to help me come up with a few easy dinners? Help! |
Sides are really easy to do in a microwave. It’s our preferred method to cook corn on the cob. Vegetables, I generally heat in the microwave (no nutrient loss like boiling), and then top with EVOO, cheese, spices, etc. Rice and pasta basically just need boiling water, which you can do in the microwave.
The warm weather makes this an excellent time for salads, no cooking necessary. For starches, you can also pick up bread, cornbread, etc., from a bakery. |
Eat raw vegetables. Yogurt works. Sandwiches work. Oatmeal. |
Sauté spinach and onions. Drain slightly. Mix in part skim ricotta and egg. A bit of whole wheat flour if you wish. Salt, pepper and other herbs to taste. Leftover chicken or meat if there’s some in freezer, but not necessary
Make pancakes. Delicious. For kids, toast baguette slices and serve. |

Grill chicken and vegetables. Grill fajita meat, peppers, and onion, microwave or use grill burner to heat up black beans Soups and stews in crock pot, fresh bread and salad. Grill salmon and vegetables and serve fresh bread or buy some couscous or rice that can be made in microwave. When we remodeled our kitchen, we have no oven for 6 weeks. Toaster Oven, electric frying pan, microwave, slow cooker, rice pot helped us hold it together!! Today, we would have our combo toaster oven/air fryer and instant pot to add to the mix....

You can do this for a week without a burner!
TJs mac and cheese (tons of microwave versions) and green salad salad, rotisserie chicken, microwaved baked potatoes grill burgers and corn big salad with bread and butter sandwiches, fruit, deviled eggs, chips or corn on the cob or both pita and hummus and tazatziki and feta and salad and olives and good tomatoes etc... takeout pizza and green salad from home microwaved pancakes with all the toppings, microwaved bacon, fruit salad |
This is us all summer! We try to avoid turning on the oven when it's hot enough for AC, seems wasteful. We also have a countertop induction plate that we use a lot after freaking out about our gas stove without decent ventilation.
Our regular rotation includes pasta and quesadillas on the induction plate, instant pot Indian curries with rice in the rice cooker and a raw vegetable salad, breakfast for dinner (fruit/salad, eggs on induction plate, toast), [mastodon]and sandwich/charcuterie nights. This week we also did green chili with chicken in the instant pot. |
