Dinner at the pool

I thought it might be fun to brainstorm favorite dinners to pack to eat at the pool. We do a lot of:

veggies and dip
fruit
sandwiches
hearty salads (pasta salad, chickpea salad, etc.)
chili in thermoses with fritos

What are you looking forward to packing to eat at the pool this summer?

Thanks for starting this thread, OP, and for the link, second PP! I've been thinking about this exact issue, and these ideas are great.

to 12:47 - yes, ours does, but I don't want to rely exclusively on them given how many other families will be using them, too. When my kids are hungry I want them to be able to eat without having to wait for a grill. I also want food options that aren't grilled, in case we're not in the mood for that. Options are good.

OP here. I’m glad I’m not dealing with the food restrictions on that linked post! And, yes, our pool has grills, but I’m not always looking to **cook** at the pool, especially on a weeknight. I also know that my kids may not want to sit down to an organized dinner that needs to be eaten when hot. Grabbing stuff out of a cooler is more our style most of the time.

I've done casseroles that I pull out of the oven and bring in the carrier or a cooler. One pot dish so it's easy to serve and transport.

We will sometimes grill at the pool but have also grilled right before leaving and bring it with us (not steaks but maybe chicken or hot dogs/burgers).

Great thread idea op! I wouldn’t want to grill at the pool either, yuck! I always bring some fruit like watermelon and/or berries. We also like pasta salads, sandwiches and pizza.

Grapes, pretzels, cold BBQ chicken. End of list.

If not grilling, we like cold dinners at the pool like:

pasta salads (with cheese, pepperoni, etc)
charcuterie/cheese/fruit boards
cold subs
tortillas, sliced chicken, shredded cheese, black beans, guacamole cups (my kids call these "pool fajitas")
empanadas
sushi (veggie)
sesame noodles with rotisserie shredded chicken
mozz, pesto, tomato on foccacia

tuna mac and watermelon (made the day before).

Our pool is close to a grocery store so i swing by on the way there and get a rotisserie chicken, baguette and Persian cucumbers and a pack of baby carrots. Pack a mustard dipping sauce) and thats easy and the kids like it.

I love the BDE of rolling up to the pool with a full baguette, and I may have to start doing that.

Our pool has an Express grill, kids carry out subs/sanwiches, grill cheese, nuggets with chips. Add some fruit and cookies for easy, pool meal.
