Healthy lunches for those who hate salads?

What can I eat that would pack a nutritional punch like a salad but is...not a salad?

I eat soup with vegetables, it's boring but fast and easy if I make one pot a week. This week I made this one:

Soup. Load it up with lots of veggies, healthy protein, and some kind of grain (barley, brown rice, oats are all nice additions).

Leftovers from dinner:
-stir fry with a protein
-chicken/salmon and roasted veg
-stew/chilli/soup

Non-leftovers:
-cut veggies and hummus + hard boiled eggs
-veg + protein wrap in a low calorie, whole grain wrap (tuna, chicken, or salmon + a pre-made bag slaw + a dressing like sesame or miso is a good option)
-canned lentil, bean soup
-brown rice (1/4-1/3 cup cooked) + steamed veg (broccoli, carrots, peas, cauliflower, etc) + a protein <- I make 3-4 days' worth at once and put it in sandwich squares so it is fast

You could also try salads that aren't really 'salad-y' - I like to a thai quinoa salad where you do quinoa + a bag of broccoli slaw + red onion + cilantro + green onion + a homemade thai dressing, or a lentil salad with whole wheat couscous, shredded carrot, finely chopped kale, almonds, and dijon dressing. Both of these last for a few days and aren't a bowl of spinach.

Soups for me.
Almost everything goes in.
Saute onions/celery and whatever veggies I'm in mood for: pepper/tomatoes, potatoes/broccoli etc. Add wate/stock if needed, chop with magic stick . I add seafood to tomato-based in the end for as protein. And whatever cheese I'm in the mood for in broccoli-based. YMMV
Or I make strong stock, and add chopped veggie/noodles/mushrooms for clear soups (kind of pho-like but made with whatever I have on hand)

I do a lot of tofu scrambles. I use a serving of block tufo plus 1 egg and scramble in some vegetables.

I gave up and started getting Vegetable and Butcher meals delivered for lunch. I was eating far too many grilled cheeses at the beginning of last year. https://vegetableandbutcher.com/

We also do pizza night on Fridays and I started ordering from the places with the best salads for lunch the next day too. There are definitely better strategies than this, but it helps

I have steamed broccoli and asparagus with Kevin’s paleo Korean bbq chicken over it. Or a sweet potato with Turkey meatballs. Or a beyond meat patty wrapped in lettuce with butternut squash fries.

lentil soup. I eat it at least two lunches a week. Also avocado/egg toast. I do IF so i never eat bfast.

I like a hot lunch and often eat dinner leftovers.

Some of my easy go to lunches:

Turkey Chili
Trader joes chicken sausage with sautéed shredded Brussel sprouts or kale and rice
Lean ground turkey and green bean stir-fry with rice

Some of my favorites:

-Veggie soup (I throw in zucchini, tomato, carrots, celery, pinto beans, spinach, corn). You can use chicken or veggie broth as base.
-Turkey breast on whole wheat with lettuce, tomatoes, cucumbers, pickles and banana peppers on top. I use a tiny bit of light mayo and spicy mustard. (You can also do this in a wrap with a little dressing, I personally just don't like wraps)
-Salmon and a baked sweet potato (I drizzle it with a little bit of olive oil and add a dash of sea salt - so good)

Agree with lentil soup. I eat it every day. Love it.
