Pi Day--anyone have a favorite key lime pie recipe?

I'm really in the mood for a good and tart and creamy key lime pie. Please post your favorite recipe if you have one!

I haven’t found a homemade one I like better than Edwards in the freezer section.

Any recipe that suggests using "regular" limes is not authentic. There is a very distinct difference in the taste of Key limes and regular limes.

You can find find them (key limes) at Wegmans periodically. I love to bake and have bastardized my lemon meringue recipe into a Key lime meringue that can stop traffic. It's more technique than recipe and took some time to get the custard and egg whites right. But damn, it's been a good road to get there. I've got a colleague who has chickens and brings me fresh eggs when I need them and they raise the bar for a meringue. Wish I could get double egg whites instead of double yolks...heh.

Yum!! All these sound so good. I’ll keep my eyes peeled for key limes but i will probably have to fudge it, so to speak, with regular limes.

I’m still under the spell of a key lime pie I had at age 12 in the Florida keys. So delicious.

My last memory of real Key lime pie was in Key West.. but that memory is a bit blurred with tequila. So... ummm... now I'm hungry for pie!

I make the one in the Baking Illustrated cookbook from Cooks Illustrated, except just use regular limes. When I did it with key limes, I couldn't taste the difference and it was a pain to zest such little limes.

Its delicious!

I also 1.5 x the crust and 2x the filling to fill my (what apparently are oversized) pie plates.

I'm a South Florida girl who deals with homesickness by making too many key lime pies. The best recipe is the simplest but don't waste time juicing the limes, just be sure to buy Nellie and Joe's (it's by the real lemon in most grocery stores). https://keylimejuice.com/nellie-joes-key-lime-pie/

Eh. Truly, close enough. I feel like there’s a citrus pie recipe that adds a bit of orange juice to change the flavor. That’s certainly better than using bottled juice. Shudder.

I cheated on Key Lime Pie with Turtle Pie in California. Np going back,,,

Turtle Pie is so good ... May be better then average sex.

Smooth caramel filling infused with rich caramel, topped with chocolate, pecans, and whipped crème rosettes on a fresh-from-the-oven chocolate cookie crumb crust.

BTW.. do not confuse Turtle pie with the horrible frozen boxed desert at your local supermarket. You have to make it at home or go to CA to try it there, they know how to make it.
