Are these awful or the gold standard? I’ve been backing a lot this pandemic and always look at a few versions of a recipe before deciding what to go with. I never choose the KAF recipes, that they are always inauthentic for foods that are from specific regions. Is it a particular flour-forward flavor profile they’re going for? |
I think they are going for simplified versions of things that your typical home cook can turn out a decent product with little or no practice or live instruction. It won't necessarily be the true authentic method, which may not be familiar to American home cooks across the country, but will reliably get an 80% result for nearly everyone. |
I’ve had great success with the 2 recipes I’ve tried from KAF. I’m a pretty proficient baker/cook. I’ve made their English Muffins and Cheesy Deep Dish Pizza and both were fantastic. |
I cannot speak to the "authenticity" of their recipes (which recipes are you referring to??) but have always had good success with KAF recipes! I have made probably 6-8 different things from the site- cakes, muffins, cornbread, even a delicious date pudding. I like that the directions are clear and specific, and I know they've been tested by professionals vs. some dubious recipes on mommy blogs or All Recipes. |

I'm the first PP (10:40) - I've also had great success with whatever I've tried. The KA sourdough starter method is still my go-to. I just meant that, IMO, they go for reliability over complexity, so while it might not be the most mind-blowingly uh-MAZE-ing version of something, it'll be pretty darned good every single time. |

I love their recipes. If you are trying to make something that hails from another country, obviously a US company isn’t going to have the most authentic recipe for that |

I echo the PP. One year I decided to find my "favorite" brownie recipe and baked tons. The KAF was my favorite and still is. |
OP here -that’s a fair point. I’ve been making things that I normally get a few times a year when I travel. I should try some of the more mainstream stuff. |
Solid — I used their bialy recipe and it was good. I have read plenty of their other recipes and they all sound about right (without being too fussy). |
