We made a New Year's Resolution to cook more often and I've realized that meal planning actually makes it so much easier to cook on a regular basis so I'm storing up ideas for new recipes to try. Tonight we are having Masoor dal (Lentils) over Basmati rice and a spinach salad with cucumbers, walnuts, and currants.

I have no energy left, so am going to make a cheese omelet, and avocado-pasta salad. They don't really go together, I know! Problem is my son hates the texture of avocado, so maybe I'll let him off with an apple or something...

Curry chicken with steamed white rice...prepared the chicken last night and will make the rice tonight when I get home.

Home made tacos with pureed veggies mixed in (green/red peppers, zucchini, onion, garlic, carrots) cooked for 1 hour in dutch oven with spices (cumin, chili powder, salt, pepper), spanish rice, whole grain taco shells, tomatos, lettuce, cheese, sour cream.

Pork tenderloin with carribean spices on spinach salad, and probably some butternut squash puree, since I'm making baby food and the rest of us can just have it spiced up.

Chicken cutlets (pounded, breaded, sauteed) with mashed potatoes and mixed vegetables.

Tomorrow we will have baked ziti (I made it on Sunday) with a green salad.
