Tagliatelle with canadian bacon (no prosciutto in house, so substituting) and peas with olive oil and toasted bread crumbs, cesear salad.

Cleaning out the fridge.

Whole wheat pasta, tossed with pesto from Costco, shredded rotisserie chicken and halved cherry tomatoes.

Fake bologne and cheese sandwiches. One of my new years resolutions was to make a nice dinner at least 4 nights a week, and I'm ashamed to say I have failed.

I made stuffed cabbage....So easy and so healthy, If I can make it so can anyone!

Ropa vieja (cuban beef & peppers) served with brown rice.

Throw a flank steak, a green bell pepper chopped into large chunks, a yellow onion in large chunks, several smashed garlic cloves, seasoned salt & pepper, and a few ounces of tomato paste mixed w/ 1/4 to 1/2 cup of red wine vinegar in the crockpot on low for 8 hrs. Shred the beef with a fork (should just fall apart), leave in the crock for another 15 minutes to absorb flavors & serve with rice.

Not sure if this is an authentic recipe for ropa vieja but my kids devour it so I'm not changing it!

We had TJ's Chili Mac and I made a quick chicken and rice soup (also doesn't go together but it was fast).

Last nigh, we had cauliflower w/raisins over couscous, similar to this recipe but cooked on the stove instead of in the oven:
