Tagliatelle with canadian bacon (no prosciutto in house, so substituting) and peas with olive oil and toasted bread crumbs, cesear salad.
Cleaning out the fridge.

Ropa vieja (cuban beef & peppers) served with brown rice.
Throw a flank steak, a green bell pepper chopped into large chunks, a yellow onion in large chunks, several smashed garlic cloves, seasoned salt & pepper, and a few ounces of tomato paste mixed w/ 1/4 to 1/2 cup of red wine vinegar in the crockpot on low for 8 hrs. Shred the beef with a fork (should just fall apart), leave in the crock for another 15 minutes to absorb flavors & serve with rice. Not sure if this is an authentic recipe for ropa vieja but my kids devour it so I'm not changing it! |

Last nigh, we had cauliflower w/raisins over couscous, similar to this recipe but cooked on the stove instead of in the oven:
