I cut off in florettes, toss lightly in milk and flour, bake for 20 min, take out and toss in buffalo sauce (not hot sauce), then bake again for 20-25 min. So good.

Meera Sodha's cauliflower korma from her cookbook Fresh India is ridiculously rich and good.

Her cauliflower coconut curry from Made in India is a bit lighter but also tasty and comforting.

I don't bother with chives or tarragon, and I find it easier to just use olive oil, but the shallots really make the dish

I throw it in the air fryer after seasoning with salt, pepper, garlic powder and baking powder. Then at the end I spoon Trader Joe’s chili onion crunch on top.

I am skeptical of cauliflower pretending to be starches, but I've made this a couple times and loved it:

Mario Batali has a great recipe in where you simmer cauliflower with garlic and olive oil for 20-30 minutes and then toss it with penne and top with parmesan.

The nYT just had an article about a sicilian pasta dish with bread crumbs and cauliflower that was supposed to be the best thing ever.

Cauliflower pancakes. Boil the cauliflower until soft, mash it with salt, pepper, and a little sugar to taste, add egg and matzo meal until it's a consistency that can be shaped into patties. Arrange on an oiled baking sheet and bake until golden, flipping part way through. Serve with applesauce and sour cream.
