| I cut off in florettes, toss lightly in milk and flour, bake for 20 min, take out and toss in buffalo sauce (not hot sauce), then bake again for 20-25 min. So good. |

I am skeptical of cauliflower pretending to be starches, but I've made this a couple times and loved it:

| Cauliflower pancakes. Boil the cauliflower until soft, mash it with salt, pepper, and a little sugar to taste, add egg and matzo meal until it's a consistency that can be shaped into patties. Arrange on an oiled baking sheet and bake until golden, flipping part way through. Serve with applesauce and sour cream. |
