I don't love kale, so I don't often buy it. I have most of a big family-sized bag leftover from a recipe I made earlier in the week. Not interested in making kale chips. I know no one in our house will eat those. Any good ideas or recipes? |
Do you make smoothies? You could chop and steam the kale. Cool it and press out the moisture. Freeze in ice cube trays with coconut water or the milk of your choice, then when you want a smoothie you throw in a cube or two. |
Chop it up and mix it into soup or Indian dal. Or chop it up and mix into tomato sauce. |
Toss it in some pasta. |

Kale pesto uses a LOT of kale. Steam or blanch it quickly and then blend with nuts, parmesan and olive oil. You can make a huge batch and then freeze in meal-sized portions. |

Add it into salads after de-stemming, just be sure to massage dressing into it well. I love the Whole Foods garlic kale salad recipe.
Or stir fry it and add white beans and diced tomatoes, then put over pasta or eggs. |
