Are Casseroles a Thing of the Past?

They just call it a "one dish recipe" now. There are whole cookbooks on them -- but really, they are CASSEROLES!

I just had some killer Tater Tot Hotdish!

1lb ground round 90% lean
1 can Cream of Mushroom
1 12-16oz bag mixed frozen vegetables
6 slices American cheese
1 bag tatter tots

preheat oven to 425
In a 9x13 or 9x9 casserole or cake ban
Spread ground round evenly in pan
Add a pinch of salt and pepper
Add Cream of Mushroom
Add mixed frozen vegetables
spread evenly
add layer of cheese slices
add layer of tater tots

Place pan in preheated oven on center rack for 45 minutes

You won't get fat from eating casseroles once a week. You are more likely to get fat from diet foods that are stuffed full of fillers and fake ingredients.

Its also possible to make them healthier. For example, in a cottage pie, I would add kidney beans and additional vegetables to stretch out the meat.

i love a casserole/one pot dish from the 6 o'clock scramble cookbook - it is basically arborio rice, spinach, mushrooms, onion, parm cheese, and chicken broth all cooked together in a dutch oven - makes a yummy, cheesy spinach/mushroom rice casserole.

I love casseroles (although I'm not a fan of things like cream of ____ soup). I recently starting making a healthy casserole: Broccoli Mushroom Quinoa Casserole. It uses cottage cheese and goat cheese. I can't find a link to the recipe but if you google "quinoa casserole" and any other ingredients you like you will likely find a lot of options.

Here is the six o'clock scramble spinach mushroom casserole. i noticed that the author calls it a risotto - i agree with the posters who said that people still eat casseroles but we call them different names now

I make my own version of the cream of ____ soup so I don't have to feel guilty about making these recipes. Store it in the freezer in single-serve ziploc bags.
here's a recipe. You can add chopped mushrooms, broccoli, etc. to make different versions.

Brown rice casserole with broth, Parmesan, and fresh herbs. Delicious and I pack it in a thermos for my child 's school lunch the next day.

Chicken, rice, sausage casserole is spicy and yummy.

Neither of these are particularly fattening- and both are tasty.

The key to perfect brown rice without a rice cooker is to bake it.

You should try it with Wild Rice. Wild Rice has more fiber, more protein, and fewer calories per serving than Brown Rice.

Yum. Good idea- I'll try wild rice. I love one pot meals in the Fall. Casseroles, dutch oven soups/stews, enchiladas/lasagne. Leftovers are great- my child loves getting a warm, home cooked meal in his thermos at school.
