So far our weekly menu has been this:
Sunday - crockpot chicken w/ salsa and black beans made into Enchiladas and Tortilla soup that night. Monday - Ravioli and Green Salad Tuesday - Shrimp and Brocolli w/ red curry paste/coconut milk. Wednesday - buffalo chicken with salad Thursday - leftovers Friday - pork chops and brussel sprouts |
| Most of these weekly menus sound lovely and delicious! Just curious, how many of the posters are SAHM vs. Full time working Moms? Can you indicate which you are when you post your menu? I would be interested in seeing what other Full time working moms are making so I can get some easy (I assume!) week-night recipe ideas. Thanks! |

I posted about having Thomas Keller's roast chicken then pot pie, etc. I SAH and can prep during the youngest's nap time. However, DH travels a lot and when he's out of town, we do meals that take under 30 min to make. The gnocchi with tomato, butter, onion sauce is an example of something easy, though you'd have to make the sauce ahead of time as I think it needs 45 min to cook (though it is dead simple to make---throw butter, halved onion, can of tomatoes in a pot and let simmer). It freezes well so you could make this ahead of time. The gnocchi is store-made and cooks fast. The taco pizza is also super easy. I follow The Pioneer Woman's basic recipe and make my own crust, but you could use store-bought raw dough, make your own and freeze it, or even use Boboli as the base. Both of those dinners can be made with mostly pantry or staple items. When I worked full time with kids, my easiest meal was some variety of chicken sausage, a box of couscous, and a steamed veggie. The whole thing took about 5 min to prep and 10 to cook. |
| I am 11:55 and woh, My DH is SAHD but even when we both worked, our meals were easy. Prep on weekend an out together in 30 minutes during workweek. |

I was a poster with a menu and also a WOH mom. Many of my meals this week came from the freezer -- chili, soup, even the rice we had tonight with salmon. Especially at this time of year I do quite a bit of weekend cooking of things like lasagna, chili, pork BBQ, pot pie filling, soup, that makes lots and can be frozen (helps that its just my son and me, so the cooking makes more meals). Really helps with the weeknight cooking!

I Work full time and this is my menu for this week that I posted. However I work only 8hrs a day and have 10 min commute and can WFH 2 days a week. I love cooking and have the time to do it. M-Ginger Turkey Meatballs, cauliflower "rice", bokchoy T-"Chipotle Style" Burrito Bowl, vegetarian W-Moroccan spiced Salmon over homemade Tabbouleh Th-Spiced Lentil Soup with Chorizo Sausage, side of baby kale salad Fri-Quinoa Superfood Salad with Cajun Shrimp |

Monday - Sweet and Sour Seitan with Brown Rice Tuesday - Acorn Squash (Microwaved) topped with Black Beans, Red Peppers, and Onions Wednesday - Fajitas with Vegetarian “Chicken” and Vegetarian Refried Beans (was supposed to make black beans but felt too lazy) Thursday - Vegetable Curry with Rice and Tomato Cucumber Salad Friday - Date night! We are having more meat substitutes this week than usual, but I had a lot on hand that I needed to use up. All of these took less than 1/2 hour, except the rice which was cooked in a rice cooker. |

I'm taking a guess -- is this poster also the same mom who posted a while back about cooking for her son and his friends (which for some crazy DCUM reason was controversial)? I'd like to say you sound like one super cool mom and I hope to be like you (and cook like you) some day! |
