Bolivia. I prefer it over the more popular Peru and Ecuador.

Most of Colombia is very untouristy and great. Cartagena is very touristy.

Agree with Estonia (have not been to the other 2 Baltics but would like to go).

My experiences are old though, like 10 years + years ago. I have kids now so no off the beaten path back packing recently.

Cyprus might not be off the beaten path, but it is cheap and with great food. You can definitely get off the beaten path by crossing over to the northern side and checking it out.

Afghanistan is incredible beautiful. The people and the mountains were lovely. I’ve also been to North Korea, I went with young pioneer tours. They won’t take Americans anymore, but I’m canadian.

NP, and I've been multiple times but only in winter so didn't check out the beaches. I was living in Buenos Aires at the time and I found Montevideo and Colonia to be a nice getaway. A little less hustle and bustle, good food, good vibes. Also, I'm a POC and I felt like there were a lot more black people there so I had more options to get my hair done, buy makeup and clothes in Montevideo so that was a big reason for my trips there. I have friends who raved about some farm visits they did there, but there were plenty of estancia resorts in Argentina so I didn't go to one in Uruguay. I did hear great things about Punta del Este beaches. It's not high on my list for a touristy destination but I think it's worth a visit. I'd probably combine with Argentina.

Uzbekistan is pretty high on my list. Samarkand looks stunning.
Senegal (Have any of you been? I am drawn there for some reason and hear positive things from expats but never hear about travelers’ experiences.)
Oman
Baltics
Caucasus, especially Georgia
Island nations in the Indian Ocean, but many of these places are well-touristed by non-North Americans given flight times

They exaggerate. Have been there many times and never a problem. It’s safer than other Central American countries, and even those are fine to visit.
