My kids love risotto. I use arborio rice and some leftover cooked rice if we have any, chicken broth, parmesan cheese, some corn sliced off the cob or frozen peas, and chopped leftover chicken. Serve with sliced tomatoes and cucumbers. Quick and yummy.

Loosemeat Sandwiches (1 lb. lean groundbeef, browned and drained, then add one cup of chicken broth and simmer gently until meat absorbs the liquid and is tender, serve on hamburger buns with a small amount of minced onion) with chips and very mild homemade coleslaw.

The sandwiches are like sloppy joes, but not tomatoey or spicey. My kids actually like the added onion.

Homemade mac n cheese with broccoli on the side. I never had Kraft mac n cheese until I was a sophomore in college I grew up eating homemade. A recipe passed down through the generations starting with my great-grandmother!

Carnitas tacos! Made the carnitas in the slow cooker after work last night - boneless country-style pork ribs cut into chunks, seasoned with salt, pepper and oregano and onions, tossed into the Crock Pot and slow cooked about 3 hours until tender enough to shred. My slow cooker runs kind of hot so I've found that 3 hours on low is enough time. Today we'll warm up the shredded meat, and roll it up into warm flour tortillas with sliced red bell pepper, avocado, and chopped cilantro. Made pasta carbonara for dinner last night while the pork was cooking - my 4 year old loved it!
