basil-tomato-lentil soup. Chop & fry an onion, chop the garden's last basil and fry for 60 seconds or so, add a can of tomato puree & a can of diced tomatoes, add 2 cups of lentils, add a few sliced carrots. Cook less than an hour, adding water if there's not enough. Serve with rice.

Tofu and vegetable curry with eggplant, carrots, grape tomatoes, cabbage, coconut milk and green curry paste. Serving with basmati rice and mango chutney

homemade polenta -- make with whatever broth you have on hand (I used veggie but you could use chicken or beef). 6 cups broth to a boil, then stir in 2 cups polenta, and simmer for about 20 mins, stirring frequently. While cooking polenta, I sauteed portobella mushrooms in garlic and olive oil. threw on top of polenta with some taleggio (soft, melty) cheese. made a lot (last night's dinner!) so it's leftovers for us tonight.

Linguine, with 2 beaten eggs and an enormous quantity of grated gruyere mixed in with it, plus a little ready-made tomato sauce. Steamed broccoli on the side. Baby tangerines for dessert.

Somehow that stuff slips down your throat, and before you know it, you've eaten three helpings. Ugh.

At the request of DH and kids (15 y.o. DS and 9 y.o. DD), we're staying in and having turkey chili with jalapeno cornbread. Easy and they love it. Only down side: no leftovers as they Hoover it up.

that sounds good, do you just stir in the egg and cheese after you drain the pasta? Do you heat it at all afterwards or just mix everything together and serve?
