My friend is hosting a potluck Easter brunch. I'm in search of a recipe that I can make the night before and heat up at her house (an hour away) on Easter morning. Even better if I can leave it in my car while I'm in Mass (1 hour), thus eliminating the need to return home after Mass to pick up the dish. I don't know what anyone else is bringing yet. |
How about baking something the day before? Hot cross buns or muffins or a lemon pound cake for example. |
If you store any food in your car, definitely put it in a cooler even if you need to warm it up once you get to your friend's. Baked ham is nice. |
I'm an excellent cook but a mediocre baker. And the host and one of the other guests are phenomenal bakers. I think if I claimed a baked item my friends would secretly be sad that one of the phenomenal bakers wasn't making that item. |
What if you did Asparagus with Hollandaise Sauce? Easy enough to blanch the asparagus and make the Hollandaise the night before, put it all on ice in a cold carrier and it will be easy to put on a nice platter when you get to your friend's house. |

Why don't you do something normally associated with Passover? For example, apples with honey, something with salmon, or appetizers made with Motzah crackers. |
