Yup, assuming OP that you meant you will stash this in the church fridge during service instead of in the car, I would do a smoked salmon spread. Just seems more brunch-appropriate to me than the chicken.

I made a leg of lamb with spicy rub one year, and it was tasty and a nice counterbalance to all the mellow flavors of traditional easter.
