Cream of chicken soup - what can i substitute?

Anonymous
I want to make a hashbrown casserole but all the recipes I'm interested in call for a cream of chicken soup. What would be a good substitute? We don't eat chicken.

Chicken broth mixed with sour cream and maybe a couple egg yolks.

You can substitute cream of anything else.

Cream of mushroom. Cream of celery.

Thanks. I wasn't sure if cream of mushroom or celery would produce an odd flavor in the casserole. I'll try one of those.

I always sub cream of celery for cream of chicken. I haven't noticed a difference

Cream of "whatever" soup and you are worried about an odd taste?

Sour cream and a bunch of salt would be about the same thing as well

Cream of mushroom would be yummy. Make a rue (google recipe for it -just butter and flour) then make a cream sauce from that with whole milk or cream. Add a little cheese and shatter mushrooms.

I prefer cream of celery if you want a canned soup.

Yes, cream of mushroom/celery work. For some recipes, I also substitute broccoli cheddar soup. It works well for some recipes.

Campbell's makes a cream of onion as well that works if you don't love the taste of mushroom or celery, but it is harder to find.
