I was wondering why I got Mexican queso fresco instead of my usual feta!

We made this a few weeks ago and it was good. I followed the recipe exactly, but used red pepper flakes instead of black pepper. I also sautéed some mushrooms and spinach and added it after I stirred the pasta and sauce together. Everyone really liked it, but not something I’d make often or anything.

So, when you said you followed the recipe exactly, you mean you did not follow the recipe.

I had a massive container of tomatoes from Costco so I guessed on the measurement but I thought I put in too many tomatoes. One block of feta is a lot. If I did it next time, I'd do 3/4 of a block OR add even more tomatoes.

Recipe was very good and easy.

My tomatoes were not very sweet and I think that affected the flavor but overall it was good.

Why don't you just add some chicken to it? It's pretty adaptable. I've heard of people adding pesto chicken.

We don't like to consume too much meat so I didn't give it a second thought. I make homemade tomato sauce a few times a year that I freeze. It has tons of vegetables in it. I use it on pasta for a quick meal with a salad and I've never thought it was odd.

I think research has shown that Americans are way too focused on protein. My mom was like this and then I started showing her how much protein was in things she thought of as pure carbs.

There is a version of the pasta recipe floating around that uses Boursin cheese instead of feta.
That is what we are going to try.

Got some quality feta and realized it was only half of what the recipe called for.
Did it anyway and it was really good.
We did grill chicken to serve with it.

I made it and I thought it was really good. But my DH said he only likes feta in salad so he did not love it and didn't eat the leftovers. So it is not happening again.
