Waffle recipe...

Just got a new waffle iron and used it this am. We used the recipe from the manual and it was fine, but I wouldn't say they were the best waffles ever. Any suggestions? Also, do you make anything besides waffles in it?

I have heard to use seltzer instead of water for fluffy waffles.

I use the Joy of Cooking waffle recipe which instructs you to fold in the egg whites.

I also use Joy of Cooking. A proper waffle recipe should include separating the eggs, beating the egg whites, and folding them in.

I use seltzer in mine. It makes them fluffy and replaces the whipped egg whites.

Were they yeast waffles? I think these are the best. If you need a quick waffle recipe I like the Mark Bittman recipe and I don't like him for much else.

Martha Stewart buttermilk waffles. SO easy and so delicious. No electric mixer, no separating eggs required.

Waffles are not Pancakes! Don't use any recipe or mix ( no Bisquick) that is used for both. Try making the recipe for Liege waffles. They are a little funny the first time because you are making a dough that is rolled and pressed into the waffle iron (and not pouring a batter).

I love the yeasted waffle recipes and they work better and less of a mess than whipping up egg whites. (Although they do take more advance planning) I have found, though, that the secret to a really awesome waffle is serving directly off the waffle iron. Once they sit for even 10 minutes, they are either soggy or dry.

Easiest and best recipe that I know and use weekly:

2 cups flour
1 tsp baking soda
2 tsp baking powder
1/8 tsp salt
combine in a large bowl

In a second bowl (I actually just use a 4 cup pitcher)
3 cups buttermilk
2 eggs
1 Tsp vanilla extract
Whisk together to combine

Combine the wet ingredients with the dry.

1/4 cup butter melted, mix into the batter.

Let it rest for a few minutes (like 5 or less) and use in your waffle iron.

The fanny Farmer overnight waffles with yeast are amazing but you need to plan ahead for those.

Also making grilled cheese in the waffle iron is delicious!!
Of course using a country white type of bread yields the best results.

What kind of waffle maker?

This is the recipe I use in my basic round Cuisinart (not Belgian). Similar to the one above, but less buttermilk. I will admit that I've never made the bananas:

If you aren't separating eggs, you're basically making pancakes in the waffle iron. I'll admit that I'm intrigued by the yeast recipe, though. That sounds like it has potential.
