Fruit and Vegetable Challenge

Work is doing a fruit and vegetable challenge. Any easy ideas to incorporate that would up my intake? Already planning on lots of smoothies.

Just as an FYI, smoothies are great, but pace yourself. 1. you don't want to give yourself the trots and 2. sometimes it's easier/faster to drink down calories than eat them. I know Bloomberg lost his attempt to limit soda sizes, but he's was only attempting to curb obesity. Sodas have a ton of sugar in them. Yes, smoothies depending on how they're made can be much healthier, but they can have a lot of sugar in them too. You don't want to end up unintentionally gaining weight on this challenge. I applaud your work place BTW. Awesome idea.

Get a veggie in at breakfast. Quiche. Veggie omelet. Pumpkin oatmeal. Someone I know purées cauliflower and adds it to oatmeal. I always feel sneaky for getting a veggie in at breakfast.

My favorite soup is carrot lemon and ginger.

You can use it as a condiment, base for soup/stews, cook it up with rice or beans, use it when making chicken, fish, beef, pork.

I agree with this - I love using veggies with breakfast. Basically, I try to keep fresh and frozen veggies on hand at all times and add them to anything and everything (eg, I use a bed of lettuce or spinach as the base for my dinners).

Steamed cauliflower crumbles in place of pasta or rice.

sautee a couple of handfuls of spinach (I get the big prewashed containers of organic baby spinach at costco or safeway) then add two beaten eggs--scrambled eggs with spinach. dump some salsa on them or add cheese.

I feel like you can put a mountain of spinach in anything and it will wilt down to nothing. Makes you feel like Popeye.
