I've used it in cornbread, and it turned out fantastic. Tried it in cupcakes - taste was fine, but turned out pretty dense.

Yes, I do this all the time. Only replace up to half the water with coconut milk though. For baking - try making a rum-coconut milk syrup to pour over a cake when it comes out of the oven - delicious! |
