What can you substitute with coconut milk, in baking?

I've used it in cornbread, and it turned out fantastic. Tried it in cupcakes - taste was fine, but turned out pretty dense.

What kinds of things can you use coconut milk for in baking?

I got very fluffy cake from coconut milk, but I didn't use any butter or oil.

Used it for buckwheat crepes, gave them nice flavor

Not baking, but try a can of it substituted for water when making rice. Great flavor!

Not baking but I just used it in oatmeal this morning because I ran out of milk. It actually worked out great!

Yes, I do this all the time. Only replace up to half the water with coconut milk though.

For baking - try making a rum-coconut milk syrup to pour over a cake when it comes out of the oven - delicious!
