What are you making for dinner tonight?

Getting ready to hit the grocery store and need some inspiration for a relatively easy dinner my entire family (which includes four kids...two of which are picky).

Thoughts?

Tonight is the season finale of The Walking Dead. We're picking up barbecue later.

I'm making spanokopita, which is easy but slightly time consuming. It requires phyllo dough (freezer section), spinach (also freezer section), onion, dill (I'm using dried), egg and feta.

Saute chopped onion in olive oil and/or butter until translucent, then add thawed frozen spinach, dill, salt and pepper for taste and cook until most of the liquid from the spinach is gone. Transfer to a mixing bowl and allow to cool slightly (I stick the mixing bowl in the freezer). While the spinach is cooling, I beat 2-3 eggs with about 1.5-2c feta. Add the egg/cheese mix to the spinach and mix well.

Brush the phyllo sheets with melted butter/olive oil mixture and layer 5-6 sheets on top of each other in a buttered casserole dish. Dump the spinach/cheese mix into the dish and layer another 5-6 sheets of buttered phyllo on top.

Bake for 30-45 minutes in 350 degree oven. It's done when the top is golden brown. Keeps well and may actually be better cold than hot

Sunday night is always steak with oven baked fries (sweet potato tonight) and a big green salad. (Plus a fancy bottle of wine, but that's not for the wee people). That's just our thing.

Last night I made shakshuka for the first time. I don't know how it existed under my radar for my entire life. Served with a big loaf of crusty bread and salad. I would make it again tonight, I enjoyed it so much, but you know, tradition and all...

Why are you clarifying that the "wee people" won't be drinking wine? Goes without saying, wouldn't you think?

Dunno about tonight but last night we did grilled lemon pepper chicken. Topped with roasted Hatch chiles and Cajun onions- a sweet onion sliced and tossed in Cajun seasoning then set in a cast iron pan on low for 30 minutes to caramelize. Baked sweet potatoes and sautéed zucchini too.

And if I hadn't qualified it, half the posters would be screeching about giving kids wine, even though it was obvious. Why must every thread turn into a nasty, pick apart session?
