What are you making for dinner tonight?

Root vegetables roasted with paprika and cumin. Persian rice. Beans with tomato and onion. Greek yogurt sauce.

Foccacia pizza topped with mushrooms, spinach, tarragon buffalo mozzarella and prosciutto. Steamed asparagus for a side dish and strawberries for dessert. It's spring in our house!

Loved it. Like an upscale frittata, but better. Leftovers for dinner today, he claims it tastes even better the next day.

Glad to know I am not alone. When DH travels, we generally eat sandwiches or whatever dd wants to make a meal out of!

Lol. I love it when dh has a dinner meeting. It makes my life so much easier. No fancy dinner, just leftovers that everyone else loves.

DS is spring breaking with my parents so it is just me.
Costco Shrimp Salad on a croissant. It will be heaven!
I will not have to say even once "please eat your vegetables"

I do miss him terribly so I have to focus on the perks!

Soup is very easy to make and you can double the amount to have leftovers for the next day. You will, however, need either a blender, food processor or hand blender.

I recommend a Leek and Potato soup. All you need are some leeks, potatoes, butter, onions, vegetable broth, heavy cream, and salt/pepper and chives to taste. So simple and good!

Monday is leftover/pantry meal day at our house! Tonight will be a chicken & veg stir fry with orange-sesame sauce.

(Frozen peas & corn from partially used bags, carrots from a partially used 2-lb bag, chicken from the freezer, leftover rice from our dinner party last night. Sauce will be made using all pantry ingredients too. )

I made spicy shakshouka - which my husband called "sharkshouka," because it had some bite. Totally delicious.
