Do you have children? If so, you have 3.5 nights per week and half a weekend.

As does any type of retail or scheduled-work.

Teaching at a CC is probably your best bet - regular schedule, 1x or 2x per week, likely at night.

Private high school tutors make $75-$100/ hour. Get an LLC and advertise in your neighbor to tutor. Only issue is you’re never done it before but you have to start somewhere. Parents in this area will pay especially if you are good with kids, personable and have a skill set you can teach like creative writing, math, world language etc
