OP, great suggestions posted.

I make lentil soup a lot in the winter - skip the bacon, its really not needed. A big batch can be frozen. Here is a recipe I make often in the winter. It makes a big batch, which I freeze and eat over time. Its very forgiving with substitutions - add what you've got, and omit what you don't.

Nanny here- When I was between jobs I actually bought groceries at the dollar store. Do you have a 99 cent store? I'm in California and they have produce etc at the dollar store. I still buy stuff there!
