OP specifically asked for a green vegetable. There’s probably a reason for that. They didn’t ask about all vegetables, including those that people commonly miscategorize as vegetables. I’m waiting for someone to suggest a watermelon because it’s green on the outside. What a
dumb dumb one would look like if you go to your doctor and tell them what a healthy, green vegetable theyre adding to their diet with zucchini LOL.
I’ve never heard anyone over the age of 12 use this phrase, and not since the ‘80s.
We always have spinach, kale, broccoli, cabbage, and green onions on hand. I grow zucchini and cucumber every summer and love those as well.
Grated zucchini is great mixed with any ground or finely chopped protein on your choice, your favorite spices (we like harissa and sumac), bound with an egg, formed into Pattie’s, and grilled, broiled, or pan-seared.
