I’m waiting for someone to suggest a watermelon because it’s green on the outside. Grated zucchini is great mixed with any ground or finely chopped protein on your choice, your favorite spices (we like harissa and sumac), bound with an egg, formed into Pattie’s, and grilled, broiled, or pan-seared.
