Uh-huh. Vast majority of Italian immigrants to US are from Southern Italy - where white sauces are rare, sauces are thicker, slightly spicier than in Northern Italy - including in NJ.

I don’t understand why there is so much mediocre bread EVERYWHERE. By all accounts considering ingredients, oven and effort- chain grocery stores should be able to make a great sourdough baguette. Instead decent bread is only available at Artisan level grocery markets.
