Tacos!!
We use Emeril's taco bar recipe if you want to make it from scratch. It tastes very similar to the Taco Bell mix, without all the extra processed chemicals. We don't like onions in our meat, so we delete the olive oil/onion part. We also cut the recipe in half for 2 adults, with maybe some leftovers depending on how hungry we are. Last night was my amazing chicken noodle soup and bread and green salad.
Tonight is chili, chips and guac. Tomorrow will be baked chicken, cauliflower, green salad and garlic bread. Thursday will be Eggplant Parm/Mozzarella with salad. Friday will be thai takeout. |

tonight: I'm going to the gym, so when I'm back, we'll do black bean burgers (buy the ones from Costco) rest of the week: veggie chili; manacotti (I buy frozen manacotti and bake it off); peanut noodles with veggies and tofu. |
