Tacos!!
We use Emeril's taco bar recipe if you want to make it from scratch. It tastes very similar to the Taco Bell mix, without all the extra processed chemicals. We don't like onions in our meat, so we delete the olive oil/onion part. We also cut the recipe in half for 2 adults, with maybe some leftovers depending on how hungry we are. Soo good.

Last night was my amazing chicken noodle soup and bread and green salad.

Tonight is chili, chips and guac.

Tomorrow will be baked chicken, cauliflower, green salad and garlic bread.

Thursday will be Eggplant Parm/Mozzarella with salad.

Friday will be thai takeout.

Very good for you (whole what pasta, turkey, tons of veggies) and my kids gobble it up. Add a steamed veggie or salad on the side.

Wednesday: Quesadillas and salad
Thursday: chicken cutlets, baked brown rice, green peas

Try Pinterest! I get most of my recipes there.
I even have a category called "Meals for this week" that I use to store my weekly meal plan. It makes writing out the grocery list much easier.

Today will be flu meds and soup. Whoopee. Last night was grilled chicken breasts topped with roasted hatch chiles and pepperjack, and herbed rice.

Last night, DH had baked salmon and I had baked chicken (with pesto and tomato on top); rice pilaf; roasted brussels sprouts

tonight: I'm going to the gym, so when I'm back, we'll do black bean burgers (buy the ones from Costco)

rest of the week: veggie chili; manacotti (I buy frozen manacotti and bake it off); peanut noodles with veggies and tofu.

Friday - likely "munchie dinner" which is a free for all of frozen boxed junk, with veggies on the side. - nuggets, wings, fries, and crudités
