Monday: Pesto chicken burger paninis, fries, frozen veg
Tuesday: Baked tacos
Wednesday: Pasta Bolognese, salad
Thursday: not there yet, probably some yummy Trader Joes thing from the freezer
Friday: take out or go out

Monday: pork tenderloin, spinach, rolls
Tuesday: Fish fillets, broccoli, pesto pasta
Wednesday: Sloppy joes (freezer meal), roasted sweet potatoes
Thursday: Steak fajitas/burrito bowls
Friday: Chinese potstickers (previously homemade, frozen), steamed edamame

Tonight: Pot roast leftovers
Tomorrow: Baked ziti and salad
Wednesday: Baked ziti leftovers
Thursday: baked potato soup
Friday: black bean quesadillas

Yup, evening activities have arrived as well as the Christmas Credit card statement. Time for easy, inexpensive meals.

Tonight - chicken tikka masala over cauliflower rice
Tuesday - roasted chicken with 2 fresh veggies
Wednesday - salmon cakes with rice and butternut squash
Thursday - eggplant parm with spinach
Friday - omelettes with all the leftover veggies from the week

Last night was burger night.

Tomorrow night: Broccoli and Cheddar Quiche
Wednesday night: Chili leftovers
Thursday: Kalua Pork recipe from Skinny Taste, Rice, Veggie
Friday: Take out

We meal plan such that we have at least one day of leftovers with everything. The quiche was from the weekend. The Kalua Pork will likely be our dinner Saturday or Monday. Sunday I usually make something new so it can be a leftover one of the days. On weekdays, I generally find a crockpot meal to make life easier at night.

I even have a category called "Meals for this week" that I use to store my weekly meal plan. It makes writing out the grocery list much easier.


This is generally what I do and makes it SO easy - everything is right there
