Going to get cold this week! What are you making to keep everyone cozy?

I want to do chili one night, but need some more good ideas.

Slow cooker beef bourgignon. Or lamb stew. Or curry.

Shepherd's pie. Pot pie. Apple pie.

I have pork posole cooking right now. Beef stew will be made later this week.
Hearty soups: minestrone, cioppino, kale and potato soup, chicken noodle soup and chicken tortilla soup ( I use rotisserie chicken as a shortcut)

Butternut or acorn or kombucha squash, roasted with some butter and maple syrup! Yum!

I routinely make curry, boeuf bourguignon and shepherd's pie. Tried chicken pot pie yesterday and it was delicious!
The kids also love lentils and sausages.

I love beef bourgignon too. Also french onion soup, chili, potato leek soup. I don't use a crock pot but these work well in a dutch oven as well. Also a baked potato makes a nice side in the winter and keeps the oven on. Regular potato or sweet.

I made this tonight, and thought it had a good cold-weather comfort food feel to it:

S/l b/l chicken breast, cut crosswise into 1/2" thick medallions

Heat a drizzle of olive oil in a skillet, brown the chicken medallions on both sides

Cover with black beans (I used a 1.5 cup container of frozen home-cooked beans, but canned would work with a sprinkle of cumin added), simmer until the chicken is cooked through.

Serve over brown rice, top with salsa and sour cream if desired.

Other winter favorites: any kind of soup, beef stroganoff, Mac n cheese, scalloped potatoes, Swedish meatballs, pot roast.

We are having chicken tortilla soup tonight and had chicken tortellini sout the other day. I also like roasted chicken for an easy yet hearty meal.
