I throw all of the following in a crock pot and cook on low for around six hours... 1 tsp of butter cut into pieces 2 cans of stewed tomatoes 2 cans of low sodium chicken broth (you could make your own but I am not that fancy!) Shredded or cut up chicken (I have used grilled chicken breasts, rotisserie chicken, pre-cook chicken in the package, whatever works!) Black beans A jar of salsa A sprinkle of cumin I usually serve it with shredded cheese, tortilla strips, and a salad. We had it last night and I just reheated leftovers because it is so freaking cold outside! |

I have always used cooked chicken because the original recipe I followed (and have switched up since then) called for it. |
I do something like this and throw in those frozen chicken tenderloins (not cooked) from Trader Joe's in the crockpot, then at the end I shred the chicken. That works too. |
