What is everyone eating now that Christmas is over?

We hosted this year so between the family houseguests and cooking for them constantly, Christmas Eve dinner, Christmas brunch, and Christmas dinner, I'm all cooked and prepped out. But I still have to feed my little family. What's everyone making this week? I need some ideas and inspiration!

I opened 2 cans of chicken and wild rice soup, added more vegetables and served with a fresh loaf of bread.

I, too, did a formal dinner on Christmas Eve, full breakfast on Christmas and another dinner Christmas night. I'm refusing to shop or put effort into a meal until I shop this weekend.

We have fancy New Year's Eve food. So in between Christmas and New Year's we eat light.

Tonight I made mashed potato cakes out of the leftover mashed potatoes (added eggs, corn, cheese, herbs--cooked on a griddle). Served with chicken apple sausage and salad.

OP here. We've got a big ham leftover too, but I'm going to toss it. Everyone is so good with leftovers; I'm not.

On another note - what is on everyone's menu for NYE dinner? We always goto an annual party so I've never cooked special for NYE but this year our DC is feeling under the weather and I'm thinking about putting her to bed early and having a special meal with DH. Lobster?

Yesterday I made western omelettes using -- you guessed it -- ham! Today it was Mac and Cheese, green beans and a side of -- ham. Tomorrow I'm tossing the ham leftovers. I can't take it anymore.
