Breakfast casserole suggestions

I'd like to make a new casserole tomorrow, one that has a bread-pudding texture, but is savory, and into which I can add bacon, with some good cheese (but not overwhelmed with shredded cheddar). Any suggestions for something like this? I've previously done quiche-like ones, and want to do something fresher. TIA.

You could sprinkle cheese on top - gruyere, parmesan, asiago, whatever floats your boat.

Look for recipes for breakfast strata. You have to make it the night before and let it sit in the fridge overnight for the eggs to absorb into the bread but in the morning, you just pop it into the oven and when it's done you eat.

I love these two, but there are tons of recipes on-line for bacon, cheddar strata.

I had a breakfast casserole recently that had cottage cheese in it and it was a little different, but good.

Sitting in my fridge right now:


8 slices white bread cubed
1 cup shredded cheese
1 lb breakfast sausage cooked
6 eggs
2 cups milk
1 tsp salt
1 tsp dried mustard

Beat eggs in a bowl, wisk in milk and spices, mix in sausage, bread and cheese. Pour in greased 8x10 pan, cover with plastic and put in fridge 12 hrs. Remove plastic, add more cheese on top if desired, bake 350, for 45-60 mins until puffed and golden.
