Sides for Thanksgiving Potluck

We are going to a neighborhood potluck for Thanksgiving and have been asked to bring a side. Looking for some yummy, not too complicated ideas that are NOT the usual candided yams, cranberry, stuffing, cornbread, etc. Thanks

Corn casserole

1 box Jiffy (must be Jiffy) corn muffin mix
1 can corn
1 can creamed corn
1 stick melted butter
1 8 oz container sour cream

Mix it all up, pour it in a baking dish, 1 hour at 375. Always my family's favorite.

Green beans that are still bright and crisp, not overcooked. These will be a welcome contrast to all the hot mushy carb food.

Blanch them for 2 min., then shock them in an ice bath to keep them crisp. Shortly before serving, stir-fry them quickly over med-high heat in a wide skillet or wok, with olive oil and thin-sliced garlic. When they're al dente, get them off the heat and hit them with salt and a spritz of lemon. Almonds optional.

Ideally, you do the stir-frying on-site so they're fresh. If that's not possible, do it just before you leave the house. If you have to re-heat there, do it either stovetop or (carefully) in the microwave. Not in the oven or a steamer, where they'll get mushy, defeating your work.

Roasted green beans (fresh green beans, single layer, on a baking sheet, spray w/olive oil, sprinkle with salt/pepper/garlic powder, bake at 400 for 20-ish minutes, sprinkle with shredded Parmesan cheese, if desired, but totally not necessary)

The Cosi signature salad--recipe on the Brown Eyed Baker blog. Heard about it here last year and took it to a party last December--two friends asked for the recipe and served it at Christmas.

Pumpkin bread.

Even better, use a pumpkin bread recipe but bake it in a 8" or 9" square cake pan. Top with cream cheese frosting. Cut into small bites for serving. That might make it too dessert-like for a side dish, but is great for nibbling before dinner.

OMG I love corn casserole.

Any type of green vegetable.

But my favorite Thanksgiving side is coleslaw. The traditional German, vinegar type. A great, cool complement to all those carbs.
