which of these dishes can i make ahead?

2. green bean casserole
3. bread pudding


Also, trying to figure out, do I bake it as a whole before hand and re-heat, or do I just assemble and then bake right before?

Bread pudding and sweet potato casserole can definitely be done ahead.

I would do roasted green beans rather than the casserole.

In terms of making that day of it depends on how it takes to assemble and cooking time as well as how many ovens you have.

Definitely the sweet potato casserole.

Green bean casserole WITHOUT the fried onions on top. Add those before you put it in to warm up.

Not sure about bread pudding (hate it), but I would think you could pre-cook that too.

But it's not Thanksgiving without frozen green beans cooked in salty mushroom soup and topped with french fried onions. It's just not.

I love green bean casserole...but I prepare it the day of so that the onions are nice and crunchy.

Bread pudding & sweet pot casserole can both be made ahead.

All of the above. Anything that goes on top (marshmallows, crunchy onions) wait until you're warming them up to serve.

I think I'd be inclined to prepare everything but not bake it until the day of - you'll have to warm it all in the oven anyway, so I'm not sure you gain anything by actually baking them the day before. The only exception might be the bread pudding, it might change the texture if it sits overnight in the liquid??? (Or might change it for the better, like overnight French toast!).

Not the bread pudding. Serve it hot and just baked, all puffy and crunchy on top with caramel sauce

I make the green bean and sweet potato casseroles the day before and add the toppings before heating it up - make sure they come to room temperature before putting them in the oven.

I'm with the PP and wouldn't make the bread pudding ahead.

I make a GB casserole from America's Test Kitchen that can be frozen ahead. It does take about an hour to bake day of.

I agree you can do any of them ahead, but for the green bean casserole, don't put the crispy onions on until you reheat it there.
