I had a roast chicken earlier in the week and I took the extra chicken off the bone and made enchiladas.

Chicken satay over rice. Only because that was on the menu for the week and I already have the chicken and sauce prepped. If I had more time this afternoon, I'd cook a long, slow beef stew or pot roast, or maybe a pot of pork chili verde.

Spaghetti with meat sauce

Bibimbap with a variety of ingredients- seasoned rice, carrots, spinach, ground chicken, mushrooms, green onions and sprouts with a poached egg and Korean spicy sauce on top.

I have leftover pork bbq. Trying to figure out what to do with it.

Taking the easy way out and ordering pizza. DH has training all this week and is later getting home. I haven't ordered out or done a pick up in months now, so I'm not feeling any guilt =)

It was going to be stuffed peppers, but DH now won't be home for dinner, so it will be leftovers for me and the kid.

Stir fry with broccoli and tofu and whatever other veg is in the fridge.
