| I had a roast chicken earlier in the week and I took the extra chicken off the bone and made enchiladas. |
| Chicken satay over rice. Only because that was on the menu for the week and I already have the chicken and sauce prepped. If I had more time this afternoon, I'd cook a long, slow beef stew or pot roast, or maybe a pot of pork chili verde. |
