What was your meal plan this week (or what will it be next week) - recipe links if you have them

Just trying to get some new ideas. I've been making some of the recipes I've found on here lately and nobody has failed me yet! Sunday -baked cod and fresh veggies

Tuesday - eggplant parm (from frozen stash from prior double batch cook)
Wednesday - leftover soup with more fresh bread

Tonight is burger night. I have to see what's on sale before figuring out tomorrow's dinner.

This week:

Monday: turkey taco lettuce wraps
Tuesday:homemade pho loaded with veggies
Wednesday: peppers stuffed with ground meat, onions, hot peppers, rice, and tomato sauce.
Thursday : chicken with brown butter sage sauce with broccoli and asparagus
Friday: pizza night
Saturday: no plan as DH and DS will be out most of the day. Probably pick up something on the way home
Sunday: late lunch with my family so we will probably have salad or something if we are hungry

Need to plan out next week so loving this thread!

I like planning a weekly menu that reuses the same ingredients in different ways - less cooking effort overall if I can intentionally cook twice as much as needed one night, and the family doesn't notice that I'm serving leftovers .

Sunday - Roasted salmon, salad, toasted baguette slices, another veggie that I can't remember (kale, maybe?)

Monday - ate out

Tuesday - Brown rice, bacon-wrapped shrimp, green beans, salad. Used this recipe, it was awesome:

Wednesday - stir fry with leftover bacon and shrimp, onion, mushrooms, and half a bag of coleslaw salad mix (no dressing, just the shredded cabbage and carrots). Served over leftover brown rice.

Thursday - steak, mashed potatoes, broccoli, salad

Tonight - I think I'll use the leftover steak, a few remaining shrimp, and the coleslaw mix to make tacos. Salad and green beans on the side, because I want to use them up before making my weekly grocery store run tomorrow. Tacos and stir-fries are my go-to ways to use up all remaining ingredients on Friday night!

Sunday: Oktoberfest food - assorted German sausages, braised sauerkraut, parsley potatoes, cucumber salad
Monday: Baked chicken with rice, plus any leftover sides from Sunday night
Tuesday: Beef and vegetable stir-fry (I adapted this recipe and it was great: http://www.harvardcommonpress.com/flank-steak-broccoli-beef/)
Wednesday: Make your own pizza night with packaged naan bread, pizza sauce, assorted cheeses and toppings
Thursday: Baked fish (Gorton's) with Ore-Ida waffle fries and green beans (DH's night to "cook")
Friday: takeout

Monday: Shepherd's pie with a potato/cauli mash
Tuesday: Gnocchi pesto
Weds: Tacos
Thursday: Sweet potato hot dogs (where you put the hot dog in a baked sweet potato rather than a bun)

Monday- stuffed peppers (turkey and rice and tomato) with salad
Tuesday- butternut squash lasagna and a salad
Wednesday- burgers and green beans and salad
Thursday- Italian restaurant
Friday- leftovers (burger and lasagna and well split it somehow and a salad

Salads tend to be a combo of spinach, arugula, cuces, radishes and sometimes apples with a couple of differ to homemade dressings so it's not the same every night.

Next weeks plan is more fish (tilapia one night, salmon another), grilled veggie night - eggplant parm with grilled eggplant, chicken in peanut sauce another night.
