Great simple salads

I've been trying to take salads for lunch more, and would love some ideas for simple, tasty and delicious ones.

I have been making, and enjoying:

Arugula
Sundries tomatoes
Gorgonzola cheese
Golden raisins
Turkey
Cherry tomatoes

Any favorite, simple salads?

My two favorites:

Lettuce
Tomatoes
Cucumber
Greek olives
Chickpeas
Cilantro
Olive oil
Feta cheese
(Can also include quinoa if you like)


Lettuce
Roasted walnuts or pecans (chop and put on a baking sheet at 300 for 10 mins)
Braised pairs (peel and cut into 4 slices. Cook in 1/2 tsp olive oil till brown, then in oven at same temp for 5 mins)
Gorgonzola
I like to use olive oil and lime juice as dressing but you can use whatever you want

Thanks everyone! Another super simple one:

Chopped kale
Cut grapefruit & grapefruit juice as dressing
Sometimes I soak some chia seeds in the juice and add to salad

This could use a few more things...

For a salad to be an entree, I need it to have protein. Leftover steak, chicken, or shellfish work well. Canned beans or nuts if those are not available (or you are vegetarian). Hard boiled eggs are another option. I generally put whatever protein on top of greens, grape tomatoes, cucumber, avocado, and cheese. Fruit I save for an afternoon snack.

my favorite seasonal salad from Sweet Green was the July salad-- greens, peaches, slivered almonds, and goat cheese with balsamic vinaigrette. I added chicken for protein. So I've been making that at home with either peaches or nectarines.

Another combo I really like is greens with walnuts, dried cranberries, and blue cheese. I'll add a hardboiled egg for protein.

What approximate amounts or ratio of oil/juice do you use? Do you add anything else to the dressing? Thanks!

Greens tossed in a simple oil and vinegar with black pepper mixed in. Shaved parm (I use a vegetable peeler on a block of parm). Nuts if you want.

That is literally the only salad I like consistently.
